Red semi-sweet wine "Storks Landing" Medium Sweet Tinto is made from a blend of Pinot Noir and Shiraz grape varieties grown in the vineyards of the terroir Quinta de Porto Franco). Vinification takes place in the classical way: berries, carefully sorted and peeled from the ridges, undergo pre-fermentation maceration, and then fermented with the participation of selected yeast cultures. The first two thirds of the fermentation time the temperature is maintained at around 30 ° C, and for the next one third of the time it is maintained at 20 ° C. Throughout the fermentation, the “cap” breaks through twice a day, with the volume of the mixed material being half the capacity. After the completion of the alcoholic fermentation, the vat closes, the natural stabilization of the wine begins, along with spontaneous malolactic fermentation and extraction of delicate tannins. This procedure lasts 30 days.
