The grapes for the production of "ice wine" Riesling was collected in the last week of December 2008 and in the first week of January, at the height of the freezing winter. At the same winemaker Bruce Nicholson was pleased with the quality of frozen berries, as well as beautiful natural ratio of their sugar and acidity. As a result, the light was born elegant, refreshing wine, awarded the Gold Medal in the competition "Mondiales des Vins" in Canada.
The creators of the Canadian brand Inniskillin (Inniskillin) Karl Kaiser and Donald Dziraldo from the outset supposed to occupy a niche of premium wines. To achieve this goal companions decided to use grape varieties Riesling, Chardonnay and Gamay, which assumed to grow at the Niagara Peninsula. The first vineyards were planted really in Ontario, and production is located in an estate belonging to the family Dziraldo. Soon wines of Inniskillin gained wide popularity among Canadians due to their high taste and quality characteristics. In 1984, 9 years after its establishment, the company introduced the first samples of its new line of wines - Icewine ("Ledyaev wine"), which was an absolute breakthrough in the wine industry.
The process of creating "Ledyaev wine" takes place in several stages: in late autumn (October), when the grapes fully ripe, they are covered with protective mesh and leave until the first frost. This technique, on the one hand, dehydrates figs and gives a little juice, but on the other - gives these precious drops incredible sweetness, richness of flavor and aroma. Harvesting takes place at night, at temperatures below -10 ° C, followed by frozen grapes put under pressure, standing in the open.
Inniskillin unchanged credo remains the pursuit of high quality products. To this end, Donald Dziraldo organized association "Vintners Quality Alliance", whose mission is to control the production of wines in Canada. In 1989 Dziraldo initiated the introduction of quality "Vintners Quality Alliance" (VQA), set high quality standards for Canadian wines. Today the company owns Inniskillin vineyards not only in Canada, but also is the owner of the estate in British Columbia ("Inniskillin Estate Winery").
