White sparkling wine Franciacorta Brut Satè n DOCG is made from selected grape varieties Chardonnay, grown in vineyards in hadrons at an altitude of 250 meters above sea level. Harvesting begins in mid-August. All the grapes are harvested by hand, without any hardware. Grapes are carefully sorted, separated from the ridges and pressed very gently pneumatic press: this is a very important point, since the vinification juice is separated from the first pressing of the second juice obtained with a stronger compression. In the production of wine is a must first quality, pH and acidity - the best. Alcoholic fermentation is carried out in stainless steel tanks, and a small part in barriques at controlled temperature 16-18 ° C. After fermentation, the wine remains in the tanks of the same whole winter. Wine is bottled together with sugar and yeast to secondary fermentation in the bottle, and then begins the period of exposure to lees within 3 years.
