White sparkling wine Franciacorta Extra Brut is made from selected grapes of Chardonnay and Pinot Noir, grown in vineyards in hadrons at an altitude of 250 meters above sea level on clay-limestone soils. Harvesting begins in mid-August. All the grapes are harvested by hand, without any hardware. Grapes are carefully sorted, separated from the ridges and very gently pressed pneumatic press: this is a very important point, since the vinification juice is separated from the first pressing of the second juice obtained with a stronger compression. In the production of wine is first pressed juice, pH and acidity are best. Harvest each vineyard vinified separately. Alcoholic fermentation is carried out in a stainless steel tank at a controlled temperature of 16-18 ° C. Each grape variety is fermented separately. After fermentation, the wine remains in the same tanks throughout the winter, and the spring blended wine, bottled together with sugar and yeast to secondary fermentation in the bottle, and then allowed to stand lees for 6 years.
Ferghettina winery founded in the 90s family Gati. Head of the family, Roberto Gatti worked long enough in other wineries of Franciacorta, and in 1991 decided to open their own business, to start buying 4 hectares of land in Erbusco. Now Roberto and his wife Andreyna with children - student oenologist Matteo and oenologist Laura - own 120 hectares of vineyards in 6 different municipalities and produce wine in a new winery in hadrons.
