White sparkling wine Franciacorta Brut is made from selected grapes of Chardonnay and a small amount of Pinot Noir grown in vineyards in hadrons at an altitude of 250 meters above sea level. Harvesting begins in mid-August. All the grapes are harvested by hand, without any hardware. Grapes are carefully sorted, separated from the ridges and pressed very gently pneumatic press: this is a very important point, since the vinification juice is separated from the first pressing of the second juice obtained with a stronger compression. In the production of wine is a must first quality, pH and acidity is the best. Alcoholic fermentation is carried out in a stainless steel tank at a controlled temperature of 16-18 ° C. Each grape variety is fermented separately. After fermentation, the wine remains in the same tank all winter and in the spring of Chardonnay and Pinot Noir are mixed to obtain a cuvee. Wine is bottled together with sugar and yeast to secondary fermentation in the bottle, which lasts four weeks, and then begins the period of exposure to lees within 2 years.
