Land Fay attracted founder Stag's Leap Wine Cellars Warren Winiarski in 1969, when he tried homemade wine Nathan Fay's Cabernet 1968. Warren knew instantly that he had found what he was looking - a combination of classical elements of fruit and structure, flexibility and balance. Shortly thereafter Vinyarski purchased adjacent land and planted vineyards, now known as Stag's Leap Wine Cellars. In 1986, Nathan sold his vineyard Winiarski family, and in his honor the vineyard was named Fay. Vineyard consists of two parts. Part located on the eastern slope on volcanic soils, close to Palisades, gives grapes with good structure. And the grapes grown on the western alluvial hill, filled with rich aroma. When they are mixed, achieved the classic style of wine that Vinyarski called "iron fist in a velvet glove."
Not a very good weather conditions the spring of 2006 was detained bud break for a few weeks. But the warm summer provided an opportunity to develop and mature vines. The grapes for "Fay Estate Cabernet Sauvignon" assembled by hand. After maceration, the wine is aged in French oak barrels for 24 months.
