Today Domaine Hubert Lamy - a modern three-storey winery, which is practiced gravitational method of winemaking, ie, excludes the use of mechanical means. All movements fault occur under the influence of gravity, which makes the wine more fineness and texture. Olivier loves experiments - he moved to the 600-liter tonne instead of 225-liter barriques, because, in his opinion, it will save the purity of fruit flavor from excessive aging in oak wood. Now almost all the wines are aged in these containers. Lamy is committed to providing exquisite and colorful wines that have emphasized natural mineral terroir St Aubin.
