Cincinnato, "Polluce" Nero Buono, Lazio IGP is a dry red wine made from Nero Buono grapes grown in the vineyards of the company in the Lazio region. N ero Buono is an ancient grape variety with centuries-old traditions, which was restored and got a new life through research and experimentation. The vineyards are located on a hilly, well-ventilated southern side of Corey, at an altitude of 100–200 m above sea level. Soils are volcanic-clay. The wine is named after one of the mythical Dioscuries, revered in the ancient temple of Castor and Pollux, whose imposing ruins are among the archaeological treasures of Corey.
"Polluce" Nero Buono, Lazio IGP - in Eno with a strong personality and deep shade. Harvested from September 25 to October 5. Berries are subjected to soft pressing and combing. Fermentation at a controlled temperature of 24 ° C lasts for 10 days. The technology of wine production also includes malolactic fermentation. The wine is aged in stainless steel tanks for a year and another 6 months in the bottle.
Producer's description
In 1947, several farmers founded the Cincinnato Cory Cooperative in Corey to grow better grapes, produce wines and support local agriculture. The farm was named after the ancient Roman commander Lucius Chinchinnato, who led the battle against the Ekwa tribe in 458 BC. After the victory over the tribe of Ekwa, Lucius refused the honors and government posts offered to him, preferring to return to his land, which, as they say, was in the area of the present village of Corey.
In 1979, a winery was built using advanced technology. Over the years, the cooperative has shown itself to be able to cope with changing conditions affecting local viticulture, while maintaining a leading role in the cultivation of autochthonous grape varieties and wine production. In 1995, Cincinnato introduced a quality project to restore and support local grape varieties Nero Buono and Bellone. Later, a wine production protocol was adopted, including
careful control of vineyards, harvest calendar and vinification processes.
Today, Cincinnato is a modern winery, consisting of 130 best farms and is the leading producer of indigenous grape varieties in the Lazio region. The total area of vineyards is 550 hectares. The company uses classic methods of growing vines, such as Cordon and Guillau. The average age of the vines is 15 years, the planting density of which is 4,000–5,000 vines / ha. The soil is mainly volcanic in the valley and limestone at the foot of the mountains. For vineyards apply integrated methods of protection without irrigation. The average annual yield is about 9,000–10,000 kg / ha.
Also, the winery pays great attention to the environment and is trying to preserve all the pristine and beauty of the territory. They use organic methods of growing grapes, a photovoltaic system to convert sunlight into electrical energy, and also use cars that run on natural gas. On the territory of the winery among the vineyards is a farmhouse of the XIX century, which offers a beautiful view of the Cape Circeo.
