Wort is fermented in two stages: first - the alcoholic fermentation in neutral tanks about 25-35 days, then held malolactic fermentation in oak barrels. Upon completion of the wine aged for 18 months in oak barrels, 50-70% of which are updated every year. Prior to bottling wine purified by egg white and lightly filtered.

Chateau La Dominique estate was founded in the XVIII century. Its then owner, made his fortune in the Caribbean, called his new property in honor of one of the French islands in the region. Later, in 1933 the family farm owned De Belenkur Gasen from the estate in Pomerol, and in 1969 it was bought by a well-known construction magnate Clement Fayat, who also purchased the property in the Médoc and Pomerol. On the advice of Michel Rolland, he completely renovated the property and he took up the affairs of the Chateau, but in 2006 changed his strategy and hired Jean-Luc Tyunvena, wholesaler, the owner of the estate Valandraud and pioneer of garage wine , which was to conduct all its affairs.
Today, Chateau la Dominique reached the level of cult wines of Bordeaux. The estate has lush vineyards from which is always going to an excellent harvest.
