Dry red wine Cantele, Negroamaro is made from the same grape variety grown in the commune in the province of Lecce Guagnano related to the historical and geographical region of Salento. Crop harvested in mid-September. The berries are separated from the ridges and crushed. The resulting mash was macerated for 6-7 days. Fermentation is performed at a controlled temperature of 24-25 ° C. Wine matures in steel tanks. The wine is good to drink young, but after aging in the bottle for 2-3 years, its flavor becomes more graceful, and tannins on the palate less bright.
Cantele farm was founded in the 50s of the twentieth century. Giovanni Battista Kantele vintner and his wife Teresa Manara built a new winery in the region of Salento, in the Italian region of Puglia, which is known soils, perfectly suitable for growing grapes, and the mild climate. Salento peninsula separates the Adriatic and Ionian Sea, so there reigns the fresh sea air, contributing to the maturation of the crop. Viticulture in these places occupy a very long time, since the days of the Greek colonies and the Roman Empire. The founders of the economy Kantele started working with autochthonous varieties Primitivo and Negroamaro, but also new areas planted with Merlot, Syrah, Malvasia Nero, Cabernet Sauvignon and Chardonnay. Gradually the number of plantations increased, and soon vineyards Kantele covers an area of 30 hectares. In 1979, the sons of the founder, graduating in the Research Center of Viticulture of Conegliano, together with his father began to produce wine under his own name. In 2003 the company opened a new Kantele modern winery.
Today, the family owns 50 hectares Kantele own vineyards and manages 150 hectares of vineyards of the other owners. Controls winery Umberto Kantele - grandson of the founder - along with cousins and sister. The annual wine production is about 2 million. Bottles, of which 30% is sold in the domestic market and the rest exported to USA, Germany, Switzerland, Norway, Ukraine and other countries.
