Sangiovese is the major grape of Italy. It is this grape that serves as a base for the famous Italian red wines: Chianti and Brunello di Montalcino. In Tuscany, this grape became a symbol of Tuscan wines and is cultivated in large quantities. This variety prefers warm weather — it is afraid of the cold and frost. That is why it develops its best traits in a warm, not hot, climate. There are so many variations of Sangiovese that it is possible to receive wine with different aromas and flavours from different regions and farms. Sangiovese is a wine with a beautiful structure, velvety tannins and a fruity aroma. The wine has a rich ruby red colour, almost approaching garnet. Tuscan Sangiovese wine has inherent flavours of cherry, raspberry and spice. Chianti wine can be graded (which is made only from Sangiovese), or it may consist of mixtures of Sangiovese with Merlot, Syrah or Cabernet Sauvignon. The most common blend is Sangiovese with Cabernet Sauvignon, with Cabernet giving this wine softness and sophistication. Only Brunello di Montalcino of the highest category must be made from 100% Sangiovese.

Even though Sangiovese is a traditional Italian wine, its vine is used by winemakers around the world when trying to make beautiful red wines. In Australia and Argentina, there are a lot of wines made using Sangiovese; however, Californian winemakers do not actively use this vine. It is worth noting that the New World wines will not be able to surpass the Tuscan Sangiovese wine in the near future.

The basic notes of the flavour are cherry, raspberry, spice, plum and violet. Blended Sangiovese red wine is served with meat, pasta, cold cuts and spicy cheeses.
