Polz, "Steirische Klassik" Sauvignon Blanc - elegant dry white wine, in the production of which winemakers use Sauvignon Blanc grapes. Berries are grown in company vineyards in southern Styria. At the end of the harvest, the berries are subjected to soft pressing followed by vinification, which takes place with strict temperature control. The wine is in perfect harmony with light snacks and salads, as well as seafood dishes.
Winery Polz carefully treats the special terroir of southern Styria. Wines are distinguished by their maturity. In the Steirische Klassik category, wines are vinified in steel vats, acquiring fruitiness, freshness and character of this grape variety. Wine from grapes harvested from one vineyard, depending on the nature of the crop year, is aged in large barrels or barriques.
A good knowledge of the terroir of the vineyard is important for the Polz winery. Soil indicators are studied that form the quality and character of the grapes growing in this vineyard. The geological configuration of the soil determines its porosity and the ability of drainage and heat transfer to improve the growth of grapes. The composition of minerals also plays an important role. For this reason, oenologists examined the vineyards and analyzed the results transferred to the maps, which also show which grape varieties should be planted in certain vineyards. The harmony of new developments and the experience of viticulture and winemaking requires more and more creativity, perspectives and concentrated attention to the basics of the process.

Wines Weingut Erich & Walter Polz have long been valued far beyond Austria. Erich and Walter Pauls began managing the winery of their parents Johanna and Reinhold Pauls in the late 1980s. Later, Christoph Pauls, son of Erich Pauls, took over as chief winemaker in the summer of 2011. Thus, the Erich & Walter Polz winery is still a purely family-owned company.
Weingut Polz is located in one of the best places in southern Styria. The geological nature of the soil, hours of sunlight and well-distributed rainfall are ideal conditions for viticulture. But the quality of wine is not only in the good will of nature.
The main thing, according to the winery owners, is the experience gained over decades, stability in strategy and action, as well as an uncompromising quality standard that turns a good harvest into an ideal wine. For many generations, the name Polz means almost manual terroir.
