Grapes for Insoglio del Cinghiale grown on clay loose soils. First vines were planted here in 2002, planting density of 6,500 vines per hectare. The crop was harvested by hand at the end of September in 15 kg boxes. Grapes passed strict sorting. Then it was ground. Fermentation lasted 21 days at a temperature of 28 ° C. 10% of the wine passes malolactic fermentation in oak barrels and the rest - in stainless steel tanks. 40% of the wine was aged for 4 months in new and two-year French oak barrels. After bottling, the wine matured for another 3 months in bottles. Total production of 190,000 bottles of fine wine. Magazine "Wine Advocate" said Insoglio del Cinghiale vintage 2007 "strikes a good balance and a flawless finish."
Campo di Sasso estate was purchased by the Marquis Lodovico Antinori in 1995. Campo di Sasso consists of three different vineyards to the west of the road to Bolgheri.
