The name "Hermitage" probably first appeared in the XVII century in memory of Henry Gaspare, Knight of Sterimberg, who, after returning from the Crusades XIII-th century, tired of waging war, he lived as a hermit (hermite) on the side, which gave him Kastilliyskaya Anna, Queen of Spain. Here he planted the first vineyards. The soils are poor, granite. Very old vines, aged up to 80 years. Harvested by hand only very late. Cyr vinified in cement tanks. Maceration lasts from 5 to 6 weeks. Fermentation temperature does not exceed 32 ° C to facilitate the extraction of the maximum flavor and aromatic qualities. After fermentation and malolactic fermentation, the wine immediately placed in new oak barrels for aging from 14 to 18 months. The wine is not filtered.
