"Casa" Cabernet Sauvignon - rich, luscious purple wine with a very expressive aroma and fresh, balanced flavor. In the blend of Cabernet Sauvignon wine overriding support four red varieties, which creates an unusually harmonious bouquet, filled with various shades of flavor and aroma.Due to weather conditions in 2012 Cabernet Sauvignon grapes reached a great degree of maturity. Winter 2011 has stood the driest in the last 10 years. In October and November the temperature was a little warmer than usual, which contributed to the beautiful flowering vines. Early summer with hot daytime temperatures and cool nights compensated high humidity, which helped to keep the berries their natural acidity. As a result, the grapes reach optimal maturity level 3 weeks earlier than usual. Cut manually bunch transported to the winery in small boxes. Thanks to modern technology and the applied optical system of selection of berries were obtained pure and healthy fruit that have passed strict quality control. Then the grapes are subjected to maceration, whereby the future wine get an elegant structure, rich color and impressive fragrance. Fermentation on natural yeast lasted for 2 weeks and proceeded in stainless steel tanks. After fermentation the wine is aged 62% in 225-liter French oak barrels the second and third times of use.
Winery Casa Lapostolle, founded relatively recently - in 1994 - and has already gained recognition wine connoisseurs in many countries, belongs to the family members of French winemakers Marnier-Lapostol - Alexandra Marnier-Lapostol and her husband Cyril de Burne. It is they who, having been in Chile, found old vines Carmenere and Merlot in Apalta Valley and appreciating their great potential, became the founders of the Chilean project.
