Harvesting to create "Biserno" lasts from mid-September to early October, he performed manually in 15 kg boxes. The grapes are strictly selected and crushed. Fermentation occurs in stainless steel vats for 3-4 weeks at a controlled temperature of 28 ° C. For malolactic fermentation, the wine is divided: 80% fermented in barrels, and 20% - in steel tanks. Bizerno first matured for 15 months in new French oak barrels, and then - after bottling - another 12 months in bottle. The wine has a beautiful storage capacity: 12-15 years.
Campo di Sasso estate was purchased by the Marquis Lodovico Antinori in 1995. Campo di Sasso consists of three different vineyards to the west of the road to Bolgheri. The unique geographical position of this large estate promised excellent prospects for development: a varied terroir, great climate Tuscan coast, hot sun and the freshness of the Ligurian Sea.
